Ingredients
- 1 1/2 cups (190 g) all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups (300 ml) milk
- 1 large egg
- 3 tablespoons melted butter (plus extra for the pan)
- 1 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, sift together the flour, baking powder, salt, and sugar.
- Make a well in the center and pour in the milk, egg, melted butter, and vanilla. Mix until just combined — a few lumps are okay; don’t overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly brush with butter or oil.
- For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2 minutes.
- Flip and cook until the second side is golden, about 1 more minute. Keep finished pancakes warm in a low oven if desired.
- Serve with butter, maple syrup, fresh fruit, or your favorite toppings.
