  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Make a well in the center and pour in the milk, egg, melted butter, and vanilla. Mix until just combined — a few lumps are okay; don’t overmix.
  3. Heat a non-stick skillet or griddle over medium heat and lightly brush with butter or oil.
  4. For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2 minutes.
  5. Flip and cook until the second side is golden, about 1 more minute. Keep finished pancakes warm in a low oven if desired.
  6. Serve with butter, maple syrup, fresh fruit, or your favorite toppings.
