- 1 cup Cooked Quinoa
- 1 ripe Avocado
- 1/2 cup Cherry Tomatoes
- 1 tbsp Olive Oil
- Fresh Lime Juice
- Salt & Pepper to taste
Instructions
- Prepare the base: Place the cooked quinoa in a large serving bowl.
- Chop the veggies: Slice the cherry tomatoes in half and pit/slice the avocado.
- Assemble: Arrange the tomatoes and avocado over the quinoa.
- Dress: Drizzle with olive oil and squeeze fresh lime juice over the top.
- Season: Add salt and pepper, toss gently, and serve immediately.
