Classic Tomato Soup
A rich and comforting soup made from scratch. Best served with a grilled cheese sandwich for the ultimate comfort meal.
Ingredients
- 1kg Ripe Tomatoes, halved
- 1 large Onion, chopped
- 3 cloves Garlic, smashed
- 500ml Vegetable or Chicken Stock
- 2 tbsp Olive Oil
- 1/4 cup Fresh Basil leaves
- Salt and Pepper to taste
Instructions
- Preheat oven to 200°C (400°F). Place tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast for 30-40 minutes until the vegetables are soft and slightly charred.
- Transfer the roasted vegetables and any juices into a large pot. Add the stock.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add fresh basil, then use an immersion blender (or a regular blender) to blend until smooth.
- Taste and adjust seasoning. Serve hot.
